Cover image: 3,5-dimethoxytoluene (DMT) is the essence of the tea-like scent of modern hybrid roses. The final steps in DMT synthesis are carried out by two enzymes that differ at the active site in only one amino acid. Native European roses lack the second enzyme and the tea scent.
